Since the number one new years resolution is to lose weight I thought I would remind you all of a few of my favorite soup recipes. Whenever I’m trying to lose a few pounds I always up my soup intake.
Warm, filling and (mostly) low in calories, soup can be a very good option. Here are some good recipes to make over the weekend. My trick is to freeze freshly made soups in individual two cup servings so I can have a variety of soups on hand at all times!
“Cream” of Broccoli
Bean and Veggie Chili
“Creamy” Tomato “Cheddar” Soup
Mexican Summer Vegetable Soup
Spicy Sweet Potato Bisque
I have made two soups in the last week alone! The basis to any soup is 6 cups of broth plus a cup or two if you are making a “creamy” soup. I try to use as many vegetables as possible. If you use onions or garlic make sure to sauté them before adding anything else.
