Chickpea “Bacon” Bits

Chickpea "Bacon" Bits  If you have been reading my blog for a while you know that I’m obsessed with all things “bacon”… smokey tempeh bacon, cracked peppercorn tempeh bacon are some of my favorite all time recipes. I really wanted to create a simpler recipe and one that required less hands on time but delivered the same taste.

I hit the jackpot with this chickpea “bacon” bits recipe. So dang tasty and handy to have. Make it at the beginning of the week and use it as a salad topper, soup croutons, protein dish or just a snack. I often tend to forget that protein is a great snack, much better than spiking your blood sugar with an apple. So snack away!

Smokey, salty, just a hint of garlic and a texture that is soft but yet crunchy on the outside. Sign me up.

DSC02501 I had a roasting session this weekend. Roasting is, in my humble opinion, the best way to cook anything.

  3. I can’t wait to try these on a salad! I love that the chickpea bacon bits can be made from things that most of us already have on hand in the kitchen. This is perfect for when a snack craving occurs and there are no snacks to be found!

  4. I really need to roast up some chick peas because I’m seeing them everywhere lately and they just look so good! I’ve been snacking on this quinoa bread lately, and I’m loving it, but it would be fun to try some roasted chickpeas and these look so easy! I love making up snacks on Sunday to have throughout the week :) xoxo, Jackie
