I’m still here…
Sorry for neglecting the blog. Some new and exciting things are happening in my life and I can’t wait to tell you about it hopefully next week.
In the mean time I have been shedding some pounds eating salad with the best darn vinaigrette around. The recipe is actually based off of a recipe in Gwyneth Paltrow’s It’s All Good cookbook (yea, it has become a go-to staple in my house). It is the same vinaigrette that she uses to flavor the best salmon I’ve ever had. Seriously grilled lemon? Who knew.
Smokey, tart, sweet…
Mixed with a touch of creamy olive oil, a hint of champagne vinegar blended with a touch of parsley and basil. So fresh, clean and crisp, it will make you want salad for every meal, besides breakfast for that you definitely need my Vanilla Bean Scones!
- 2 Lemons
- 2 Tablespoons Olive Oil
- 1 Teaspoon Champagne Vinegar
- 1/2 Teaspoon Chives
- 1/2 Teaspoon Parsley
- Heat non stick pan on high heat. Spray pan with canola oil spray.
- Slice lemons in half and place pulp side down into the skillet. Grill for 5 minutes.
- Juice lemons once they have cooled a bit.
- Stir in the rest of the ingredients and serve.
I can not wait to eat this salad for lunch:)
So I briefly mentioned it but yes I am finally on track loosing those holiday pounds I carried all summer. Fingers crossed I can keep this up!
