I’m still here…

Sorry for neglecting the blog. Some new and exciting things are happening in my life and I can’t wait to tell you about it hopefully next week.

In the mean time I have been shedding some pounds eating salad with the best darn vinaigrette around. The recipe is actually based off of a recipe in Gwyneth Paltrow’s It’s All Good cookbook (yea, it has become a go-to staple in my house). It is the same vinaigrette that she uses to flavor the best salmon I’ve ever had. Seriously grilled lemon? Who knew.

Mixed with a touch of creamy olive oil, a hint of champagne vinegar blended with a touch of parsley and basil. So fresh, clean and crisp, it will make you want salad for every meal, besides breakfast for that you definitely need my Vanilla Bean Scones!

Grilled Lemon Vinagrette

Yield: 2-3 Servings

Grilled Lemon Vinagrette

Ingredients

  • 2 Lemons
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Champagne Vinegar
  • 1/2 Teaspoon Chives
  • 1/2 Teaspoon Parsley

Instructions

  1. Heat non stick pan on high heat. Spray pan with canola oil spray.
  2. Slice lemons in half and place pulp side down into the skillet. Grill for 5 minutes.
  3. Juice lemons once they have cooled a bit.
  4. Stir in the rest of the ingredients and serve.

So I briefly mentioned it but yes I am finally on track loosing those holiday pounds I carried all summer. Fingers crossed I can keep this up!

  1. Can’t wait to hear your news! And congrats on losing those holiday pounds! This dressing looks great and I will definitely be trying it. Hmm yesterday for lunch I had a salad which I put inside a wrap. Today looks like overnight oats and spinach salad – strange combination but I just grabbed everything running out the door this morning!

  4. Ok, how have I missed this vinaigrette recipe in Gwyneth’s cookbook? I’m going to have to try it as I’m always looking for new homemade dressings. I might even try this vinaigrette massaged into some kale, surprise, surprise :)

  6. Grilled lemon sounds really interesting. Next time we grill out, I’ll have my husband throw some lemons on the grill and try this out. I’ve been wanting to look into getting Gwyneth’s cookbook. I’ve heard very good things about it.
