This week was one of my best friends 30th birthday. Andrea was one of the first friends I made in the city. We have been there for each other through laughter, tears and happiness. For as long as I’ve known her she has stressed out about turning 30. Then, when it happened this week, she was so relaxed about it. I am so happy to see her succeeding in life and love.

Along time ago while cruising Pinterest I spotted just the recipe to make for Andrea’s birthday, Strawberry Shortcake Fudge by Inside Bru Crew Life. The version I made for Andrea was not vegan but I think you could easily use vegan substitutes. Vegan marshmallow whip, vegan butter, and vegan white chocolate chips are all pretty common ingredients.

But the full fat, sugar version is pretty good by itself. I love the crunchy cookie crumb bottom, it makes a spot on texture to the real deal in a bite sized treat. You would seriously bet that there where whole strawberries in the fudge, but there are not!

Strawberry Shortcake Fudge- Not So Perfect Life

Strawberry Shortcake Fudge by Inside Bru Crew Life

2 Cups Shortbread Cookie Crumbs

5 Tablespoons Butter Melted

3 Cup White Chocolate Chips

2 Tablespoons Butter

1/8 Teaspoon Salt

1 Can Sweetened Condensed Milk

1 7 Ounce Jar Marshmallow Creme

2 Duncan Hines Strawberry Shortcake Frosting Creations Packets

Directions:

1) Melt the butter and combine with shortbread cookie crumbs. Press into the bottom of a well greased 8 by 8 pan.

2) In a small pot, met the butter white chocolate and condensed milk together, stirring until smooth.

3) Add in the marshmallow creme and flavor packets, heat and stir until smooth again.

4) Pour hot fudge into the 8 by 8 pan. Sit in the fridge for about 2 hours until firm.

Cut and serve!

I’m off to Denver this weekend to celebrate another birthday of a cute little 6 year old. I am very excited to do some hiking, go see a Rockies game and hang out with P’s family.
