Yesterday I shared with you one of my best recipes. Yes, the smokey tempeh “bacon” is one of my favorites. Simple, smokey, salty and tasty it doesn’t get much better. UNLESS you combine it with spicy avocado spread, in that case you have yourself the makings of the best sandwich ever!
This might come as a shock to you but avocados were an acquired taste for me. At first I hated them. Then as I got older I started to like small bites of guacamole. Now I find myself craving avocado. I love the texture, all creamy and buttery and I love the taste.
Todays spicy avocado spread can be used in many ways. I prefer to use it on a sandwich with my tempeh bacon, but you could use it in a mexican dish, in a salad or as a dip.
The jalapeno gives the dip a kick while cilantro, apple cider vinegar, lemon juice, tahini, cumin and garlic add in the flavor.
You can make this spread ahead of time and use it all week! This recipe makes one cup, if you want to double the recipe.
Spicy Avocado Spread- Vegan
1 Jalapeno (Take out half of the seeds)
1 Clove Garlic
1 Large Handful of Cilantro
2 Tablespoons Lemon Juice
1 Tablespoon Tahini Sauce
1 Tablespoon Apple Cider Vinegar
1 Teaspoon Cumin
1) Cut open the avocado take out the pit and scoop out the “meat”. Cut the stems off of the cilantro and rinse it well.
2) In a blender or food processor add all of your ingredients. Blend well until smooth. I had to scrape down the sides quite a bit to get this done.
3) Store in an airtight container.
Toasted with vegan butter on gluten free brown rice bread… My dream sandwich come true!
