“Cream” of Broccoli Soup- Vegan


Opps I did it again (yes I love Britney Spears!), another “cream” of soup. I’ve been holding back this “cream” of broccoli soup for while. Why? Well perhaps I was waiting until everyone gets back on the healthy train after the holidays!  Its one of my favorites and its so good for you.

It is no secret that I love cream of anything soup… that is as long as it is low-calorie and dairy free. A couple of weeks ago I posted my hands down favorite soup,“cream” of tomato soup. This “cream” of broccoli soup is a bit different as it is loaded with carrots, celery, onions and yes brocoli. The creamy texture comes from quinoa and almond milk.

A veggie packed soup is sure to help you detox from the holidays.

Broccoli haters be warned its doesn’t taste as overly brocoli as you might think and you might like it. Peter, who along with President Bush Senior is a brocoli hater, tasted it and didn’t hate it! I know, not a glowing review but I consider that a win!


My dinner last night straight out of the Vitamix!

You will love this “cream” of brocoli soup because it of its’ nice nutty peppery kick. Quinoa adds the nutty taste and it also boosts the nutritional value of the soup. Celery adds a nice bite to the soup as well, but if you don’t like celery you can omit.

“Cream” of Brocoli Soup- Vegan

4 Cups Brocoli Florets

2 Stalks Celery

1/4 Large White Onion

2 Small Carrots

4 Cups Vegetable Broth

1/2 Cup Quinoa

2 Cups Unsweetened Original Almond Milk

1/2 Teaspoon Pepper

1/2 Teaspoon Salt


1) Sautee onions, carrots and celery in a 8 cup pot on the stove in 2 tablespoons olive oil until fragrant and onions are translucent.

2) Add broth, quinoa, brocoli, pepper and salt to the pot, turn heat to high until boiling. Once boiling reduce the heat to simmer. Cook 15-20 minutes, until veggies are soft.

3) Transfer to a food processor or blender and add almond milk before blending. If you have a smaller food processor add the almond milk to the pot so that you can mix the milk evenly into the soup.

4) Blend the soup until smooth. If your blender or food processor isn’t that powerful it could take a few minutes.

5) Its ready!

  1. i love britney spears too. :) And creamy luscious soups like this – I can’t believe it’s vegan and made with almond milk. Even though I’m not vegan, I prefer almond milk over regular. I’ve never ever like cow’s milk! I’d love a detox from the holidays – this is a good place to start. :)

      Cleaning up your diet after the holidays can be hard. Thats why I prefer to do it with things that sound bad for you, but really aren’t. Its a mind trick :)

    I googled “broccoli soup almond milk” & chose your recipe because it seemed fast, straightforward and I had all the ingredients on hand (except I used low-sodium chicken broth). This soup ended up being fast, easy and DELICIOUS! And only took a couple of minutes in my old-fashioned blender divided in 2 batches. Will make again!
