Merry Christmas!

This Merry Christmas post is a day late… why? Because weather made us fly home a day early and I didn’t have time to write yesterday :( But oh well at least we made it home!I hope you and your family had a great Christmas and that you have time for the three important R’s of life.

Recipe Testing

tree2 Peter and I celebrated our Christmas Friday night with a nice dinner at Rockefeller Center and opened our presents to each other. Three Christmas’s together <3.

Notice Peters excellent wrapping above. What can it be? He and my mom went in together to get me a Vitamix!!!!! The Vitamix will keep me busy for at least three months testing out new recipes. Thank you soooo much!

Since we came back a day early I am using today to whip up a few different dishes!

First up tortilla soup. I love making this soup from the recipe I borrowed from Peters mom. This time I steamed some chicken and pulled it to make it more friendly for my meat loving boyfriend. But it’s perfectly tasty without it!

I also used my new handy dandy Vitamix to make my first batch of homemade hummus!

Hummus: Recipe by Vitamix Cookbook

1 Can Garbanzo Beans (Half Drained)

1/8th Cup Tahini Sauce

1/8th Cup Lemon Juice

1/4 Teaspoon salt

1/2 Garlic Clove

1 Teaspoon Olive Oil

1/2 Teaspoon Cumin

1/8th Cup Water

Directions: Add all ingredients to your blender or food processor and blend until you get a smooth consistency.

Making this with my new Vitamix was a breeze. I love the pre-set settings. Did you get a new cool cooking tools for christmas?

I wish each and every one of you a Merry Christmas!
