Vegan Tortilla Soup- Umm Umm Good!

Peter very rarely puts in request for meals. When we got our power back on Saturday he asked me if I would make him the tortilla soup. Luckily it’s not one of those soups I have to watch on the stove. You just plop all of your ingredients in a crock pot overnight and cook on low for 8 hours. Unfortunately I don’t have ANY pictures of me cooking it this time. All I have is a blurry picture from a year ago. How could I forget the pictures?!?

Vegan Tortilla Soup

1 Medium Zucchini Chopped

1 Large Red Bell Pepper Chopped

1 Jalapeno Chopped

1 Medium Onion Chopped

28 Ounce Can of Roasted Tomatoes

10 Ounces of Enchilada Sauce

10 Ounces of Green Chilis (2 small cans)

1 Small Can of Corn

4 Cups Vegetable Broth

1 Tablespoon Cumin

1 Teaspoon Red Chili Powder

If you want it non-vegan add a cup of diced cooked chicken.

Add all of the ingredients to your crock pot and set the temperature to low for 6-8 hours or overnight. You can also cook on high for 3-4 hours. In the morning your kitchen will smell fantastic and you will have plenty of soup to enjoy for the week. I freeze leftovers in individual serving containers to eat another week.

You can also quickly make homemade tortilla strips. Slice a tortilla into strips and give them a quick spray with Pam and sprinkle with a bit of salt and cumin. turn the broiler of your oven on and pop them in the oven for about 5 minutes. Depending on how thick your tortilla was it might take more or less time.

I garnished my soup with vegan cheese, avocado and homemade tortilla strips, but you can add anything you’d like. Peter added cheddar cheese and some chicken.

During the aftermath of Sandy I had to trow away all of my pre-made soups. Such a sad moment. Hopefully I will have time to restock soon!

I’m headed to Oklahoma tonight! I can’t believe Kim and Aaron’s wedding is finally here. I’ve been friends with Kim for 9 years and I’m so happy to be there with her as she marries her (other) best friend. It’s crazy how times flies I remember when I first met Kim in Leadership class in the 10th grade. I’m not sure why we got along so much but that was one of the best years of my life. Carefree and having fun no matter what we did. We still have fun no matter what we do but now we have bills to pay :(

Cant wait to share with you all pictures from the beautiful wedding which will take place on Saturday evening. It will also be Peters first trip to Oklahoma!
