I <3 Salad

Ever since my horrible experience with salmonella that I believe I got from a Hale & Hearty salad I have not been eating a lot of lettuce. Salad’s use to be a staple of mine but its been two months since I have chowed down on one. Every time I looked at lettuce my stomach churned… This week I’m happy to say that changed! A big thank you to Gena over at Choosing Raw for inspiration this week with her creamy orange walnut dressing.

You know me, I love recipes that use what you likely have in your kitchen. Since I didn’t have walnuts I used cashews. I’m convinced whatever nut you have on hand would turn out fantastic. Even an old orange in the fridge is fine. I used about 3/4th of a big one that’s been sitting in my fridge for about month!

Creamy Cashew Orange Dressing:

1/2 Cup Raw Cashews

3/4th Large Orange Peeled and Diced

Juice of 1 lemon

1 Tablespoon Champaign Vinegar (Any type will work)

1 Tablespoon White Miso Paste (If you don’t have it that’s fine)

Blend everything at the same time in your food processor. It takes about 1 min to get the consistency right, then store in little glass jars for easy single use consumption. This recipe makes about 5 servings.

In addition to the dressing I also toasted some edemame and chickpeas on the stove with a little olive oil. This gives the salad a little more filling and meaty texture. Also shred some carrots on there. I love to add shredded carrots to just about everything, even though I don’t love the taste of carrots. When you shred them carrots lose their bite and add a bit of a crunch and a lot of nutritional value. Shred them bigger if you are a carrot fan.

Heat a bit of oil in your pan and add chickpeas and edemame for about 10 minutes until you get the “toasted” look.

And then combine it all together! It ate three meals so far off this and I’m not tired of it! I’m pretty happy to be back wanting salads again. You will be seeing a lot more dressing and salad recipes from me soon!

  Last night I had an amazing workout with my trainer. I really miss pushing myself in the gym. It’s hard to be aggressive in the gym and train for a marathon. But it is well worth it. I can’t believe I’m almost a week away from tackling 26.2 miles again. I”ll do a short run tonight before dinner, lets hope my foot doesn’t bother me! I have a busy weekend ahead of me. Volunteering at a school in Brooklyn tomorrow morning then dinner with friends. Sunday Funday were going to the Jets game (or as Peter calls it the Colts game). We are tailgating before the game! I hope I have time to whip up some type pf spicy bean dip to take to the pre-game party. Any ideas on a quick treat I can make?
