Quick and Easy Lunch Take Two

This morning I woke up with just enough time to get lunch and breakfast ready in 10 minutes. Can that be done? YES, thanks to a little inspiration from Heather Eats Almond Butter’s Cowboy Quinoa post on Sunday! She inspired me to use up what I had left of my Trader Joes’s taco seasoning and make todays lunch a fiesta. Since I had such limited time I knew I would be throwing together a wrap with leftovers… the and result was pretty tasty.

Taco Tofu and Bean Wrap:

1 Tablespoon Taco Seasoning

2 Servings of Light Firm Tofu

1/4th Avocado

1/2 cup Cooked Chopped Spinach

1/2 cup Pinto Beans

1 Whole Grain Wrap

1) Quickly saute your tofu in a pan with the taco seasoning. Scramble the tofu like you would eggs or taco meat!

2) Mash the beans and avocado together onto one side of your wrap.

3) Add the cooked tofu, top with spinach and that’s a wrap! (literally)

Because we have an amazing toaster oven at work I was able to toast mine for 5 minutes before eating. Very tasty and guilt free.  I ate this is an apple and PB. What did you have for lunch today?

  1. Don’t you love being able to find a use for leftovers? That seasoning packs some heat, and I loved that you used it in a wrap…toasted. Wraps are always better toasted. What did I have for lunch? Avocado + salsa + chips. Lots of chips. :)
